This recipe is in thanks to my wonderful mom- I love this recipe. It is more on the sweeter side, and is great with butter, honey or plain. It is also great with a hot bowl of chili.
Ingredients
1/2 cup Cornmeal
1 1/2 cup Flour
2/3 cup Sugar
1/2 teaspoon Salt
1 Tablespoon Baking Powder
2 Eggs
1 1/4 cup Milk
1/3 cup Oil
Preparation
Preheat oven to 350 degrees. Mix all the dry ingredients and the wet ingredients separately. Then combine the ingredients and mix well. Pour the mix in a 8x8 pan and cook for about 35 minutes or until a toothpick inserted into the middle is clean.
Variations
For a 9x13 pan size, double the ingredients and cook for about 45 minutes or until a toothpick inserted into the middle is clean.
