Chocolate Crackle Cookes

Sorry that is has been a "little" while since I last posted- but it is worth it - These coookies are DELICIOUS!

Ingredients
1/4 c. melted shortening, butter or margarine
1/4 c. cocoa
1/2 c. oil
2 c. sugar
4 eggs
2 tsp. vanilla
2 1/2 c. flour
1/2 tsp. salt
1 1/2 tsp. baking powder
1/2 c.- 1 c. powdered sugar

Directions
In mixing bowl combine the first 6 ingredients and mix well, then add the flour, salt and baking powder and mix until well blended. The dough will be quite runny and you will want to refrigerate it for at least 2-3 hours, or even overnight. Once the mixture has been refrigerated, use a cookie scoop, or tablespoons to make small balls and roll in the powdered sugar to coat. Preheat oven at 350 degrees. Place dough balls on cookie sheet-sprayed with pam, or on wax paper. Bake for about 8-10 minutes- don't over bake as they can dry out. Once baked, remove from cookie sheet, let cool and then EAT! This makes about 3-5 dozen depending on the size of the cookies. They are super good!

Oatmeal Pumpkin Chocolate Chip Cookies

Now that it is the fall- Pumpkin cookies just sound right. This is a great tasting recipe to get your pumpkin fix, and include tasty oats too.
Ingredients
2 cups all-purpose flour
1 1/3 cups quick or old-fashioned oats
1 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. pumpkin pie spice
1/2 tsp. salt
1 cup butter or margarine (2 sticks)
1 cup packed brown sugar
1 cup granulated sugar
1 cup Pumpkin
1 large egg
1 tsp. vanilla extract
1 1/2 cup chocolate chips

Preparation
Preheat oven to 350 degrees. Grease baking sheets.
Combine the flour, oats, baking soda, cinnamon, and salt in medium bowl. Beat butter, brown sugar and granulated sugar in large mixer bowl until light and fluffy. Add pumpkin, egg and vanilla extract; mix well. Add flour mixture; mix well. Stir in chocolate chips (nuts or raisins also) Use tablespoons (or cookie scoop) to drop dough onto greased baking sheet; Bake for 10-12 minutes or until the cookies are light brown underneath.
Alterations
You can also add or use in place of the chocolate chips- chopped nuts, or raisins
